Have you ever tried any watermelon recipes? Watermelon is definitely delicious on it's own, but sometimes you need some variety!

I'll admit... I got a watermelon back around the 4th of July, because I really had a craving.  I hadn't had any in a while.  Well, unfortunately, I wasted quite a bit of it.  There were only 3 of us, plus the dogs, eating some... but I still wound up throwing most of it away.

So, yesterday, I was challenged by a co-worker to write about watermelon. I figured I'd do some digging and find some cool ways to shake up traditional watermelon.  Find some new watermelon recipes to try!

The first thing I found was this Watermelon Breeze!

Three cups of watermelon, a spring of mint, lime and coconut water. Put it all in a blender and mix!  Sounds like a nice, refreshing drink for summer, don't you think?  I feel like you could spice it up a bit with some vodka too (only if you're 21+).

This next one has a bit more ingredients and prep work, but does sound pretty yummy: Watermelon Salad with Cinnamon Pretzel Crunch!

Watermelon, blueberries, peaches, nectarines... some of my favorite fruits.  A little white wine or grape juice.  Some sugar, cinnamon, pecans, pretzels and melted butter.  Probably NOT the healthiest option to utilize that watermelon, but definitely sounds tasty!

Another yummy drink, Watermelon Lemonade!

It uses most of what you'd expect- watermelon, lemons, water, sugar... This recipe also has rock salt and mint.

Or if you're feeling patriotic, you could try this Watermelon Pizza!

This recipe calls for non-dairy yogurt, but I'd definitely use whipped topping in place of that!  Then you add some blueberries and strawberries along with some coconut flakes.  This "pizza" could definitely be versatile and you could put a lot of different toppings!

Which one of these are you most likely to try?  Do you have a favorite watermelon recipe?
